Paleo Almond Butter Cups

My sweet tooth has been getting the best of me lately.  But I know I'm not the only one, because there are a surprising number of "Paleo" desserts floating around the internet these days.
Since peanuts are frowned upon, it is handy to have almonds as an alternative.  Almond butter is a lovely alternative to peanut butter, and when you find some at the discount grocer's for cheap - well, that's a double win.
I was surprised to see that this recipe doesn't use chocolate chips - she makes her own chocolate coating out of three simple ingredients:

2 tbs coconut oil
2 tbs maple syrup (I used honey)
4 tbs cocoa powder

Mix them all together then use half the chocolate to coat the bottom of cupcake cups, then freeze for 5 - 10 minutes (until hard)
Add a dollop of almond butter.
Cover with the remaining chocolate mixture, then put back in the freezer.
This is an exercise in self-control!  When nicely hardened, savor each bite.
Makes six cups.
Okay!  So I've got some good news and some bad news.  The good news is that MAY IS GARDENING MONTH here on windsandwater.  Yes, that's right.  We'll be focusing on biointensive gardening methods and checking out my adorable seedlings and talking about all the delicious things you can make with produce straight from the garden.

The bad news is that I'm probably only going to be posting twice a week throughout the summer.  Summer is busy, and I like that.  But the blog is going to suffer.  So...I'm sorry.  Three per week is hard to maintain :)
